Mumei Ramen

Ramen Mumei is a tiny ramen shop in a Hongdae backstreet, with little signage and just 10 seats. Diners order at a ticket machine and sit at the counter, watching the chef make each bowl. The main ramen is Paitan Shoyu, a creamy chicken-based broth with sous-vide chicken and a soft-boiled egg; there is also Aburasoba, dry noodles with mayo. Prices are around 8,000 to 9,000 won, and queues are common.
