Wonjo Seokdae Chueotang

Wonjo Seokdae Chueotang has served Gyeongsang-style chueotang (loach soup) in Haeundae-gu, Busan, since 1984. Fresh loach is slow-cooked with aged radish greens in large cast-iron cauldrons, and the clear broth gets perilla leaves and sancho (Korean pepper). Diners add garlic and hot peppers to set the heat. Side dishes include seasoned dried cutlassfish, and the restaurant was featured on the TV food program "Baek Ban Ki Haeng".
