Tonshou

Tonshou is a tonkatsu restaurant in Suyeong-gu, Busan. Its thick cutlets of Berkshire K black pork, raised on pesticide-free, HACCP-certified farms at 500 meters on Jirisan, are smoked over charcoal and stay pink in the center. Five sauces, including British Maldon royal salt, mustard and a house sauce, come on the side, and rice, cabbage salad and soup are refilled free. Seating is counter only, waits can reach 2 to 3 hours, and reservations are made ahead through the Catch Table app.
