Iine is a Japanese ramen shop in Huam-dong near Seoul Station. Its broth is made from beef bones simmered for 24 hours, and the Gyu Ramen is topped with beef slices torched by hand. There are only 10 seats, all at a counter, and you order at a kiosk. The owner weighs every ingredient, and a line often forms before opening.
