Wooga is a Michelin-recognized Korean beef restaurant in Gangnam-gu that came to Seoul in 2015 from Hoengseong, a region known for its beef. Under Chef Heo Se-byeong's 'Meat Science' approach, dry-aged Korean beef is cooked all the way through. The beef ages in-house for 40 to 60 days. The menu has aged sirloin and beef brisket, and its Tojang stew uses soybean paste that the chef's mother fermented 42 times over 21 years for her diabetic family.
